This delicious, quick-and-easy dish is great anytime of the year. It will make any member of your family a sweet potato lover.
2 large sweet potatoes
2 T butter
2 T favorite sweet jelly (I used Sand Hill Plum)
1 T favorite pepper preserves (I used apricot pepper)
2 T chopped green onions
1 t large flake sea salt
Poke sweet potatoes, wrap in saran wrap, cook for 15 minutes or until soft. Let cool, then slit the potato and peel off the outside. Add other ingredients and mash. Use the mixer for quick mixing. Serve!
