These barbecue biscuit cups were one of my favorite dishes growing up. Now, I realize they are still delicious, a quick, easy-to-make dish and a good change up in the menu routine. This is one the kids can help out with too! I recommend this dish for all the kids, and big kids, in your life.
1 lb ground beef in small crumbles (I like to brown this in big batches and then freeze a pound at a time)
1 c ketchup
1/4 c brown sugar
2 T flavored ketchup (I like truffle flavored)
2 T liquid smoke
2 T worcestershire sauce
1 t salt
1 c shredded Colby jack cheese
16 refrigerator biscuits
Preheat the oven to 375 degrees Fahrenheit. Mix together the ketchup, brown sugar, ketchup, liquid smoke, worcestershire sauce and salt. Then add the hamburger to the mixture.
Next take out your muffin tin and place on biscuit in each cup. Take the remaining four biscuits and cut them into thirds. Take those biscuits pieces and push them into the bottom of the tins to make a slightly larger base.
Add the mixture to top each biscuit and then top generously with cheese. The cheese helps hold the meat together.
Bake for 10-13 minutes until the biscuits are golden brown.
