Tequila lime chicken
Last week, we had two friends over for dinner. They asked what we were having so they and without thinking I said Tequila lime chicken. So, I went ahead and made up a recipe, and the great news is it was a hit! It's a great dish from the grill, so perfect for keeping the house cool in the summer heat.
1/4 c tequila (I like to use good tequila, I think it makes a big difference)
1/2 c lime juice
1/4 c chopped cilantro
1 T chopped garlic
1/2 T chili powder
1/2 T dried cilantro
1/2 T cumin
2 lbs chicken breast
I picked up the chicken breast at the meat counter. I like to pick out the big, plump juicy ones. To help them cook quicker, I slice them in half so they are twice as thick. After you have prepped the chicken, mix up the marinade and let at least for at least 6-8 hours.
This dish is perfect for the grill. Your time will depend on the grill type and the heat. Check with a meat thermometer for doneness. For chicken it should be 165 degrees fahrenheit.
Serving suggestion: Top with chili con queseo sauce and tortilla strips.
