20 Minute Watermelon Salad
Watermelon was one of my favorite flavors of summer, and still is today. This salad takes the natural deliciousness of in-season watermelon and punches it up a notch. To save time, I always invest in the seedless watermelons, it just makes life easier!
6 cups of cubed watermelon
1/2 c feta crumbles
10 large basil leaves
3-4 pieces of bacon
Spread out the watermelon on the dish. Add the feta crumbles and then chop up the bacon on top. I always have cooked bacon in the fridge so it can be an easy go-to in order to add flavor to any dish. I used peppered bacon to add a bit of a kick to the dish. Finally chiffon, or finally slice your basil leaves. I like to stack the leaves, roll them up and then finely slice the leaves with kitchen shears. It's beautiful and easy! Just add the dressing and serve.
Sweet summer dressing ingredients
1/4 c white wine vinegar
1/4 c sugar
1/2 c olive oil (always use the good stuff)
1 T lime juice
1 T soy sauce
Add all of the ingredients to a dressing jar. It's important to get a jar or canister with a lid to make it easier to shake and mix all the ingredients.
