Fall is in the air and I love that football games bring together my friends and family. These kettle corn popcorn balls are easy-to-make and have a hint of fall flavors, including pumpkin spice! In addition, you can shape your popcorn balls into footballs to bring something extra to your next tailgate.
1 c brown sugar
3/4 c unsalted butter
1/3 c corn syrup
1 T vanilla extract
2 t pumpkin spice
2 c mini marshmallows
1 large bag of kettle corn (approx. 16-18 cups, I like Thrill's Kettle Corn)
1 c chocolate candies (I went with Purple M&Ms to match our team's colors)
In a large saucepan, combine brown sugar, butter and corn syrup and whisk until all ingredients are blended and boil for three minutes. Add vanilla, pumpkin spice and marshmallows. Stir into butter mixture until well blended. Pour mixture over kettle corn. I had to spread the kettle corn into two bowls to make sure I could get it well coated. Once the mixture has cooled slightly, add in your M&M's. If you add too soon, they can melt. I'm speaking from experience, I was too antsy and didn't wait!
Once your mixture has cooled for 2-3 minutes, take about 1/2 c of the mixture, or roughly a handful, and mold it into a football shape. Let your footballs harden.
