Pressure Cooker Chicken & Rice

I love my Cuisinart pressure cooker. I feel like it has challenged me to step out of my ordinary cooking box and make the same dishes, in a different order to harness the power of the pressure cooker. So, to start off 2018, enjoy my Pressure Cooker Chicken & Rice.


3 T butter
3 chicken thighs (can use chicken breast, but thighs add flavor)
1/2 package of onion soup dry mix
2 c broth (low sodium, the mix adds plenty of salt)
2 c water
1 1/2 c rice (not the instant kind)
1 c sliced mushrooms
1 large head of broccoli
1 pkg cream cheese (go for the 1/3 less fat, still delicious)

Turn your pressure cooker to browning and add your 3 T of butter. After it's melted, take your chicken thighs and place them skin down. Brown for 2 minutes on each side. Add in your metal trivet under the chicken. Sprinkle the onion soup dry mix and then pour in your water and broth to mix the flavors. Switch to low pressure, seal the lid and cook for 8 minutes.

After the cooker is done with the first phase, depressurize, remove the chicken. Remove the skin and bones and added shredded chicken back into the pressure cooker. Add your rice, mushrooms, broccoli and cream cheese. Add your lid again and cook on 6 minutes, low pressure. Let the cooker naturally de-pressurize if you have time. Taste to see if any salt or pepper is needed.

Take off the lid and serve!
