Easy roasted salmon

We were trying to beat the winter blues, and needed something fresh, so easy roasted salmon to the rescue! A key if you buy fresh salmon, make sure to use it soon after you purchase as it doesn't have as long of a shelf life. Also, if you are unsure about cooking fish, salmon is an easy one to start with. Plus any reason to use my cast-iron skillet is sure to be good!

4 4 oz salmon fillets
1/4 c butter
1 garlic clove minced
2 T olive oil
1 1/2 c panko bread crumbs
2 T Italian seasoning
1 c shredded parmesan cheese

Preheat your oven to 350 degrees. Mix the panko bread crumbs, seasoning and pramesan cheese. Add this mixture to a shallow dish for breading. Lay out your salmon fillets and then drizzle with olive oil.

Turn your burner to heat up your cast-iron skillet and brown your butter. When it starts to turn brown, add in your minced garlic.

While the butter is heating and the garlic is flavoring the butter, drench your salmon fillets in the bread crumb mixture and place in the hot skillet. 

Brown for 2 minutes on each side, then place the skillet in the oven, skin side down if there is skin on the fillet. Cook for 9-10 minutes until flaky.

Take the extra butter liquid left in the bottom of the pan and spoon it onto the salmon fillets, then serve!
