Grilled Corn Creamy Avocado Slaw

This summer salad brings together great flavors, colors and textures. Sweet corn is a favorite at our house and it's even more fun when it comes from a friends farm. Plus, sweet corn is even better when in it's in season. Around here, eastern Kansas, that's usually July and early August. To get the most out of this salad, grab produce from the garden, the local farmers' market, or make sure it's in season. It is sure to be a hit at your next get together!

Ingredients
4 c thinly chopped red cabbage
2 c heirloom tomatoes (they are beautiful and taste great)
2 avocados
1/4c chopped onions (green or sweet)
1/2 c feta
4-6 ears of sweet corn

Dressing:
1 avocado
1/2 c sour cream (you can use fat free)
2 limes (juice and zest)
2 cloves of garlic
1/4 c cilantro
1 t smoked paprika
1 t cumin
salt & pepper

Add all your salad ingredients into your serving dish. Mix your dressing ingredients to the food processor or blender. Blend until smooth. Make sure to add enough salt, and can add olive oil if you'd like the dressing a little lighter. Toss the salad with the dressing and serve! You'll love the crunch of the cabbage, creaminess of the avocado, saltiness of the feta and the burst of flavor with the sweet corn!
